The Mezcal Sour is where smoke learns softness. Lime brings snap, agave syrup rounds the edges, and egg white or aquafaba turns the whole thing into a cloud with backbone.

This drink matters because it teaches texture. Mezcal can be bright and smoky without being aggressive, and foam lets that smoke arrive with a velvet jacket instead of a bullhorn.

Sours are old cocktail architecture: spirit, citrus, sweetness, and balance. Add egg white or aquafaba, and the drink becomes softer, silkier, and more dramatic without becoming louder.

Mezcal changes the equation by adding earth and smoke beneath the lime. The result should be bright first, soft second, smoky third — a sequence, not a wrestling match.

Egg white gives classic texture, but it should be fresh, properly handled, and avoided by anyone who should not consume raw or lightly handled egg products. Aquafaba is an excellent vegan alternative and avoids raw egg concerns.

The stylish way

Build the cloud, then chill it.

Dry shake first. Add mezcal, lime, agave syrup, and egg white or aquafaba to the shaker without ice. Shake hard to build foam.

Add ice. Open the shaker and add plenty of ice for the second shake.

Shake cold. Shake again until chilled, diluted, and silky.

Double strain. Fine strain into a chilled coupe. Let the foam settle like a tiny edible cloud.

Finish with bitters. A few drops on top are enough. Serve immediately while the foam is alive.

Silky does not mean sloppy.

Mezcal: clean joven espadín or ensamble with moderate smoke and citrus-friendly structure.

Lime: fresh juice only. Bottled lime will flatten the drink and embarrass the foam.

Agave syrup: enough to round the sour edge, not enough to turn it into dessert.

Foam: egg white is classic; aquafaba is a strong alternative. Either way, shake with purpose.
